Acar Kuning. “Pickle” is called “acar” in Indonesian, it usually refers to “preserved vegetables in vinegar and salt” such as cucumber, carrot and shallot. This “acar kuning” (yellow pickle) has the same base ingredients but it’s cooked, has more intense flavor because of many spices such as garlic, turmeric, galangal, candle nuts, etc and yellow-colored (from the turmeric). Today I used Cucumber, Carrots, Cabbages, Pinapples and Cauliflowers.
These acar is perfect as condiments for your fish or chicken dishes, served with peanuts 🙂
I N G R E D I E N T S
- Cucumber
- Carrots
- Cabbages
- Pinapples
- Cauliflowers
- 1 lemon grass part
- 2 bay leaves
- 2tbsp sugar
- 1tsp salt
- 2,5tbsp white rice vinegar
S P I C E S
- 50gr shallots
- 3cloves garlic
- 6 candle nuts
- 1tsp ground turmeric
- 1tsp ground galangal
- 5tbsp cooking oil
H O W T O P R E P A R E
- Put all the spices into food processor until its smooth
- Add in the paste in mrdium. heat, bay leaves and lemon grass.
- Fry them until fragrance
- Add in the veggies and cook it for a while not for so long 😉
- Add in salt, sugar and vinegar
- Stir until well combined.
