

I was browsing my instagram and read a post by mbak Pepy @indonesiaeats about this Ayam Bakar Iloni from Gorontalo. This grilled chicken, reminded me of “Ayam Bakar Bumbu Rujak” which my Mom used to cook for us. The difference is in the spices that used in this recipe. Spices include red onion, garlic, candlenut, ginger, turmeric, cumin, coriander, galangal. So without question I message her and asked for the recipe. My husband loves it ! So I got the recipe from Mbak Pepi, here it is:
I N G R E D I E N T S
- 750gr chicken, cut into small pieces
- 3 pandan leaves, cut into 3 cm length
- 10gr peeled shallots, thinly sliced
G R I N D
- 10gr peeled shallots
- 15gr peeled garlics
- 20gr ginger
- 15gr galangal
- 1/2tsp turmeric powder
- 1tsp each of toasted coriander seed and cumin
- 1/2tsp toasted white peppercorn
- chilies as much as you want
- 5 toasted candlenuts
- oil
- 150ml coconut milk
H O W T O P R E P A R E
- Stir fry spice paste about 30 secs stir in pandan and slices of shallots
- Keep stirring until fragrant aroma is in the air
- Add in cut chickens, stir
- Add coconut milk, reduce the heat and let cook until coconut milk is absorbed
- Grill chicken until charred and return back to the coconut spice mixture
- Served with warm rice, yellow pickled veggies and chilli
