Västerbotten Paj

Västerbotten Ost Paj – Västerbotten Cheese Pie. This is one of the best classic pie in Sweden. Normally we served this during the midsummer tradition party. Served with homemade Red Onions Pickled, Caviar, Creme Fraiche & Dill. I don’t have the at home, so I just made the Red Onions Pickled for serving and it would be perfect with a glass of wine  but it’s too early to open a bottle of wine hihihi..The sweetness of the pickles matches the saltiness of the cheese, perfect combo for sure?! So far this cheese has become many peoples favorites. One of them is our Om @william_wongso_kuliner who really love this cheese (nanti aku bawain lagi Om kalo mudik)

I N G R E D I E N T S

P A S T R Y

  • 125 g butter
  • 3 dl flour
  • 1 tbsp water

F I L L I N G

  • 300 g grated Västerbottensost®
  • 3 eggs
  • 2 dl Whipped cream
  • black pepper

H O W T O P R E P A R E

  • Set oven to 225 °.
  • Mix butter and flour in food processor to a crumbly mass
  • Add the water and mix together to form a smooth dough
  • Press the pie dough into a pie mold (24 cm in diameter)
  • Use a fork to prick the dough and set in the oven for about 10 minutes
  • Whisk eggs and cream, add the cheese into the mold the pour the egg and cream into the cheese
  • Season with salt and pepper
  • Bake for about 20 minutes until the pie has solidified
  • Let cool
