Martabak Telor

Martabak Telor is one of the popular street food in Indonesia. Martabak or Murtabak is of Middle Eastern origin and this is the Indonesian version of it. It is filled with minced beef, eggs and minced green onions wrapped on a thin wrapper then fried until it become crispy. Served with spicy vinegar sauce

I didn’t do the wrapper by myself, so I just do the fastest way by using spring roll wrappers.

I N G R E D I E N T S

M A R T A B A K T E L O R

  • Spring roll wrappers
  • Minced beef
  • Minced green onions or leeks
  • 2-3 Eggs
  • Salt
  • Pepper
  • Coriander
  • Garlic
  • Cummin

S P I C Y V I N E G A R S A U C E

  • 60gr sugar
  • 100ml hot water
  • 1 clove garlic
  • 3 shallots – finely chopped
  • 1 small cucumber – peeled and seeded
  • 4 red and/or green chili
  • 5tbsp vinegar – or more to taste

  • Beat the eggs
  • Add the beef and minced leeks
  • Add salt, pepper, garlic, cumin and coriander
  • Take one spring roll paper, add in the middle of the wrapper your filling then fold it
  • Then fry both sides until it becomes crispy

S P I C Y V I N E G A R S A U C E

  • Stir the sugar with hot water until melted
  • Add the rest of the ingredients in and let it pickles overnight if you have the time.
  • It can be stored in the fridge for up to 1 week
